Meatball Kebabs with Tzatziki

This is an amazing dish and so filling and tasty. Heat an oven to 200 degrees celsius.

Ingredients

  • 12 Meatballs
  • 2 Tomatoes
  • Skewers
  • Romaine Lettuce or Little Gem ( Romaine is better as the leaves are bigger )

Tzatziki

  • Half a cucumber
  • 280g of Greek Yoghurt
  • 2 Garlic Cloves ( Minced )
  • 1 tbsp finely chopped Mint
  • 1tbsp finely chopped Dill
  • The zest and juice of 1 small Lemon
  • Seasoning

Soak the skewers in water for a few hours ( if you have time ). Then cut the tomatoes into 4 and put your kebabs together. Fell free to add mushrooms, peppers or onion to make bigger kebabs.

Put the skewers in an oven proof dish and pop in the oven for about 20 mins. Whilst in the oven prepare your Tzatziki. I like to start with the ingredients already prepared but there is enough time to make from scratch.

Take the cucumber and cut in half.

Scoop the seeds out of the middle. Don’t throw them out as you can add to salad or put them in a refreshing cocktail later. Grate the cucumber coarsely. Add to a large bowl and mix in all the other ingredients. Mix well to allow all the flavours to evenly coat the cucumber. Add seasoning and mix before putting in the fridge till you are ready to use it.

Why not make your Tzatziki the day before and allow to infuse in the fridge. overnight.

Remember after the 20 minutes to turn your kebabs and return to the oven for a further 20 minutes.

When the kebabs are ready, place two Romaine Lettuce Leaves on your plate and place the kebabs on the lettuce. Get a small bowl and serve your Tzatziki in it.

Gently push the food on the skewers off onto the lettuce leaf and drizzle generously with the Tzatziki.
