Fluffy French Toast

I don’t know about you but I’m a sucker for brunch. This fluffy french toast makes the perfect morning treat. Don’t forget to add lots of maple syrup and enjoy with a cup of coffee or an iced tea.

Ingredients

  • 3 to 4 large pieces of thick bread (I use settlers grain or sourdough)
  • 1 cup plant-based milk
  • 3 tsp chia seeds
  • 1 tsp vanilla 
  • 1 tsp maple syrup 

Directions

  • Combine plant-based milk, chia seeds, vanilla, and maple syrup in a medium sized bowl 
  • Put in fridge for about 10 minutes 
  • Dip both sides of bread into mixture so it gets absorbed but not soaked 
  • Place the bread on a non-stick pan and cook on medium heat for a few minutes on each side until golden 
  • Top with cinnamon and maple syrup & any other toppings of your choice (I like to use a berry compote and carmelized bananas – recipes below)

Berry Compote:

Ingredients

  • 1 tsp coconut water
  • 1 cup fresh or frozen berries

Directions 

  • Combine coconut water and berries to a pot
  • Cook on medium to high heat for about 5-8 minutes, stirring and mashing the berries occasionally 
  • Pour on top of French Toast

Carmelized Bananas

Ingredients 

  • 1 tsp date syrup 
  • 1 large banana 

Directions

  • Cut banana down the middle or in small slices 
  • Coat date syrup evenly over banana pieces 
  • Place on a non-stick pan and cook on medium heat for appx 2 mins on each side 
  • Enjoy with your French Toast
