Caramelized bread pudding

Our world today has something truly spooky to be scared of and the truth of the matter is; it’s us against COVID-19.  It doesn’t matter rich or poor; kings, queens, celebrities, and common human beings. All are equally under lockdown. There is no aha moments, happy hour gatherings or inaugural ceremonies etc..It has become a human thing and we have only one agenda; be cooperative, stay home, pray, follow some simple instructions to survive each passing day and above all, be appreciative!

Meanwhile, foodies like me who doesn’t like to sit ideal are busy working out something to make the home environment interesting and aromatic. That means to fill the air with bakery sort of aromas. In order to bring it into my home and write about it in my blog, I set out to do the real cooking just to get such sweet buttery flavor in my home. So, this caramelized bread pudding is simple and it fits so perfect in the comfort food category and as well a treat or a snack.

As a last note, please remember that no matter what, we all still have our own aha moments and  happy hour gatherings within. Instead of allowing it to evaporate in the current mayhem, all we have to do is set out to do something nice and keep it rolling until we are allowed to venture out and breathe the COVID-19 free air again. Caramelized bread pudding

Easy to prepare caramelized bread pudding!

Caramelized bread pudding is fun to prepare and super delicious to enjoy with a cup of black coffee or tea.

Ingredients

  • 1 can evaporated milk
  • 12 slices of bread
  • ½ cup sugar plus 1 cup sugar to caramelize
  • 2 eggs
  • 3 tbsp melted or softened butter
  • 1 tbsp vanilla
  • 2 tbsp all purpose flour
  • ½ tsp ground cinnamon
  • ½ tsp Salt or to taste

  • Directions

    In a heavy bottomed sauce pan, heat sugar over medium to low heat, stirring frequently to avoid scorching and blending the mixture equally. When the mixture turns light brown color and dissolves well, instantly pour onto a medium cake pan and swirl to coat the pan and set it aside.

    Cut bread into small cubes or crumble it. In a large bowl, add the crumbled bread mix, evaporated milk, eggs, vanilla and the rest of the ingredients. Mix well. Pour the mixture into prepared caramel pan. Steam it in a pressure cooker for 35 – 40 minutes or when the wooden stick inserted in the center of the pudding comes out clean.
