May Weekly Meal Plan #2

Good morning; how was your weekend? We stuck around the house a lot, which was nice. Time to go on walks (and get caught in sneaky spring rain), work on a couple projects (replacing the light fixtures in the master closet and meeting with a designer about some ideas to spruce up the kitchen), and play some games (Taco Cat Goat Cheese Pizza and Kaitlyn’s pick of Monopoly).

For Mother’s Day we went to church, then David took the kids and Finley to a park for a couple hours so I could get things done. We played tennis together in the afternoon, they prepared a yummy salmon dinner, and then we all crashed onto the couch. Maybe it’s pollen but we were worn out. We watched an episode of Alone (the survival show that we enjoy watching together) and all went to bed early.

I hope all you mamas out there felt appreciated on Mother’s Day. Your work is so important. And for those who experience heartache on a day like Mother’s Day, I hope you felt seen and yet gave yourself the space you needed. Holidays can be tricky with every year older we get, a combination of leaning harder into the joy they bring and breathing through the heartache they can cause.

Monday

Cod fish taco bowls because apparently I prefer everything over rice rather than in a wrap these days. I made a simple beer batter consisting of 12 oz beer, 1 c flour, and 1 egg, then salt and peppered the cod, dipped it in the batter, and pan fried it in about a 1/2 inch of oil, 4 minutes per side. I served it over rice with a quick slaw made of cabbage, sour cream, mayo, lime juice, salt and pepper. Topped with green onions and cilantro.

Tuesday

I’m so happy this slow cooker chicken curry has a permanent home on the blog; I’ll be making it regularly once sports kick up again in the fall and I’m in need to set it and forget it dinners.

Wednesday

Grilled ribeye steaks with baked russet potatoes and a roasted cruciferous blend. Purple cabbage, green cabbage, broccoli, and an onion- chopped and tossed in olive oil, salt, and garlic powder. Delicious!

Thursday

Date night! I made the girls some of these quick and easy chicken meatballs I’ve seen people sharing a lot of lately, and they dipped them in sauce of choice with mac n cheese on the side. David and I snacked our way through small plates at Kindred on the most beautiful evening. The Grandfather Pickles and their milkbread are my favorite, but we also enjoyed squid ink pasta, fried oysters, and a charcuterie board.

Friday

Family pizza and game night! Now that soccer season is over we have our Fridays back. Using my go-to bread machine pizza dough (I now make 2 batches), we topped them with pesto, red sauce, mozzarella, peppers, onions, and pepperoni.

Saturday

Since rediscovering how easy it is to make hamburger buns with the bread machine bun recipe, I find it hard to convince myself to just buy a pack at the store. It takes about 7 minutes of hands on time, total. I grilled up burgers and kept it simple with no sides, mostly because I was too tired to make it happen. 🙂

Sunday

Mother’s Day! I knew the kids would want to make me dinner, so I kept my choices simple: salmon, a Caesar salad kit, and a bag of Daily Harvest frozen cauliflower rice grain blend.

Breakfast and Lunch

Breakfast was mostly sourdough with an egg and fruit, and lunches were leftovers. One day I baked chocolate chip cookies and we just ate those for lunch. The kids thought I was pretty cool that day 🙂
