This cookie recipe was inspired by my Angel Food Cake Mix Cookies recipe that we recently shared! It got me to thinking...a lot of people like using cake mix in their baking! And while we didn't make our Fruity Pebbles Cookies with cake mix, it did give me the fun idea of creating recipes for cookies made with cereal!

Now, these Fruity Pebbles Cookies are not your run of the mill little cookie...they are quite large and more like those fancy gourmet cookies you would buy from a storefront bakery! Just one cookie is quite more than enough!

  • Cookie Sheet (also known as a Baking sheet) - Cookie sheets are great for making everything from cookies (duh) to cooking all sorts of appetizers and whatnot. I even use a cookie sheet to make my Sheetpan Ranch Potatoes recipe!
  • Parchment paper - I always recommend If You Care brand because their parchment paper is coated with silicone, unlike most parchment papers that are coated with Quilon, which contains heavy metal that can leave toxic trace elements in your food and baked goods.
  • Mixing Bowls - This includes 1-qt, 1.5-qt, and 2.5-qt round glass bowls. This is the perfect set for all manners of prepping, baking and home entertainment!
  • Measuring Cups - I prefer a measuring cup set so that I can multitask when baking.
  • Cooling racks - cooling racks are an essential for bakers because they allow our baked goods to cool faster than sitting them on a counter. These allow cooler air to circulate UNDER your baked goods as well as on top.

Instructions for How To Make Fruity Pebbles Cookies 

Whether you are a kid at heart or just have a serious sweet tooth, this recipe is sure to satisfy. The fruity flavor of the cereal combined with the sweetness of cookie dough makes for one delicious combination. Plus, they are so much fun and easy to make - so even if you are not an experienced baker, you can still get in on the action.

Before we started on making this recipe, you are going to preheat your oven to 350 and line a cookie sheet with parchment paper.

Begin by mixing together the all purpose flour, cornstarch, baking soda and the finely crushed Fruity Pebbles cereal. Then set this mixture aside while you are working on the next step of our recipe.

Add your room temperature unsalted butter and the granulated sugar to a large mixing bowl and beat with a hand mixer until you have a fluffy mixture. This step should take you about 3-5 minutes.

Add your eggs and the pure vanilla extract and beat them together until they are completely combined.

Next, you are going to fold in the whole cup Fruity Pebbles cereal. Now, refrigerate the cookie dough for 30 minutes.

Bake for 15-17 minutes or until cookies just begin to brown on the bottom.

Add the dry flour and Fruity Pebbles cereal together and beat the mixture just until it is combined.

Use ⅓ cup measuring cup & press cookie dough into cup. Drop 6 cookie dough balls on prepared cookie sheet, press to flatten until about ½" thick.

Remove from oven, let stand 2 minutes on baking sheet before placing on cooling rack to cool completely. 

Hint: I placed the Fruity Pebbles cereal into a resealable sandwich bag and crushed them with a rolling pin. I then poured that crushed cereal into a measuring cup so that I had 2 cups and then I added that to the flour.

Substitutions and Variations for our Fruity Pebbles Cookies

While I think that these Fruity Pebbles Cookies are a fantastic cookie recipe just as they are, I know that some folks like to change things up! You can follow these helpful suggestions below for different variations of our cookie recipe.

  • Cocoa Pebbles cookies - you can easily make this recipe a cocoa pebbles cookies recipe by ONLY changing the kind of cereal that you use! If you are making Cocoa Pebbles cookies, I also suggest adding ⅓ cup of mini chocolate chips to make them extra delicious!
  • Fruity Pebble marshmallow cookies - You can use Fruity Pebbles Marshmallow cereal or just add ½ cup of mini marshmallows to your cookie dough before making your cookie dough balls for a marshmallow kick!
  • Cinnamon Toast Crunch - replace the Fruity Pebbles entirely with Cinnamon Toast Crunch cereal and make Cinnamon Toast Crunch cookies!

You can also freeze these cookies for up to a month! Just make sure that you let them thaw at room temperature for a few hours before taking a bite!

Ingredients

  • 3-¼ cup all purpose flour
  • 3 tablespoon plus 1 teaspoon cornstarch
  • 1 teaspoon baking soda
  • 2 cups finely crushed Fruity Pebble cereal
  • 1 cup 2 sticks, butter, cold and cubed
  • 1-½ granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 cups Fruit Pebble cereal whole, not crushed or ground

Instructions

  • Mix together flour, cornstarch, baking soda and finely crushed cereal. Set aside.
  • Add butter and sugar to a mixer and beat well until fluffy, about 3-5 minutes. Add eggs and vanilla and beat well until combined. Add dry flour and cereal together and beat just until combined. Fold in whole cereal.
  • Refrigerate for 30 minutes.
  • Preheat oven to 350 and line a baking sheet with parchment paper. Use a ⅓ cup measuring cup and press dough into measuring cup. Drop 6 cookies onto prepared baking sheet and press each one lightly to flatten until cookie is about ½" thick.
  • Bake for 15-17 minutes or until cookies just begin to brown on the bottom. Remove from oven and let stand for 2 minutes on a baking sheet, before removing and placing onto a cooling rack to cool completely.
